One item that is not often covered when considering iOS security is the Apple ID that is used to manage a device. The Apple ID can potentially be used to wipe a device (for example, via the Find My iPhone app), restore a device's backup, or even view the purchased media (songs, movies, iBooks, and apps) that may not be available on a device.
When you uninstall an app, the app is still in your purchase history. As you can see in the following screenshot, you can get a fair amount of information about what someone uses a device for:

The only way to prevent someone from looking at such information is to secure the Apple ID. Use strong passwords for these and change them from time to time. When an employee leaves an organization, you might also be able to reset their password using an e-mail address if the Apple ID uses a corporate e-mail address.
